Ingredients
Scale
Crust and Topping
- 1 1/2 cups flour
- 3/4 cup sugar
- 1/2 tsp salt
- 12 tablespoons cold butter
Filling
- 1 cup sugar
- 2 eggs
- 1/2 cup sour cream
- 1/3 cup flour
- 3 cups fresh California blueberries
- 1 tablespoon lemon zest
Instructions
- Preheat and Prepare Pan: Preheat your oven to 375°F (190°C) and spray a 9×13 inch (23×33 cm) baking dish with cooking oil to prevent sticking.
- Make the Crust: Combine the crust ingredients—flour, sugar, salt, and cold butter—in a mixer fitted with the paddle attachment until the mixture comes together. Set aside about one cup of this mixture for the topping, then press the remaining crust evenly into the bottom of the prepared baking dish. Bake the crust for approximately 12 minutes until it’s lightly golden.
- Prepare the Filling: In a separate bowl, whisk the eggs until combined, then add the sugar, sour cream, and flour. Mix until smooth and creamy. Gently fold in the fresh blueberries and lemon zest to evenly distribute throughout the filling.
- Assemble and Bake: Pour the blueberry filling over the partially baked crust, spreading it evenly. Sprinkle the reserved crumble crust mixture as a topping over the filling. Bake for an additional 40 to 45 minutes or until the bars are cooked through and the topping is golden brown.
- Cool and Serve: Remove the bars from the oven and allow them to cool completely for about an hour before cutting and serving. This ensures the bars set properly for clean slices.
Notes
- Use fresh, ripe blueberries for the best flavor and texture.
- Make sure the butter is very cold when making the crust for a flaky, crumbly texture.
- The lemon zest adds a fresh brightness—do not skip it as it complements the blueberries perfectly.
- Allow the bars to cool completely before cutting to avoid them falling apart.
- Store leftover bars in an airtight container in the refrigerator for up to 3 days.
