Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package directions. Reserve ½ cup of the pasta water, then drain the pasta and set aside.
  2. Brown the Sausage: Heat a large skillet over medium heat. Add the Italian sausage, breaking it into crumbles as it cooks. Cook for 6–8 minutes until browned and fully cooked. Drain any excess grease if necessary.
  3. Sauté Garlic: If the skillet looks dry, add 1 tablespoon olive oil. Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  4. Cook the Asparagus: Add the trimmed and cut asparagus pieces to the skillet. Cook for 3–5 minutes, stirring occasionally, until the asparagus is tender-crisp and bright green.
  5. Make the Sauce: For a creamy sauce, reduce heat to medium-low and stir in the heavy cream along with ¼ to ½ cup of reserved pasta water. Let it simmer gently for 2–3 minutes until slightly thickened. For a lighter garlic butter sauce, add 2 tablespoons of butter and ¼ cup reserved pasta water instead, stirring until a light glossy sauce forms.
  6. Combine: Add the drained pasta to the skillet with the sausage and asparagus. Toss well to coat everything evenly in the sauce. Stir in the freshly grated Parmesan cheese, lemon zest (or juice), red pepper flakes if using, salt, and black pepper.
