Instructions

  1. Prepare the cucumber: Begin by grating one cucumber until you have about a cup. Squeeze out excess moisture using a clean towel to ensure the tzatziki base isn’t watery and maintains a creamy texture.
  2. Make the tzatziki dressing: In a mixing bowl, combine the grated cucumber with one cup of plain Greek yogurt, a tablespoon of fresh chopped dill, freshly squeezed lemon juice, and two minced garlic cloves. Season generously with salt and pepper, then mix thoroughly until fully combined.
  3. Shred the chicken: Take your rotisserie chicken and carefully pull it apart into bite-sized shredded pieces. Transfer the shredded chicken into the bowl containing the tzatziki mixture.
  4. Combine chicken and dressing: Use a spatula to gently fold and toss the shredded chicken with the tzatziki mixture to ensure all pieces are well coated with the dressing.
