Mochi Dough
- 1 cup glutinous rice flour (or mochiko flour)
- 1/4 cup sugar
- 1 cup water
- 1/2 cup cornstarch (for dusting)
Instructions
- Boil and Peel Peaches: Boil a medium pot of water and prepare the peaches by cutting a small cross into the bottom of each. Submerge the peaches in boiling water for one minute to loosen the skin.
- Cool and Halve Peaches: Quickly transfer the peaches to a large bowl of cold water to halt cooking. Peel off the skins gently and cut the peaches in half, setting aside for filling.
- Prepare Mochi Dough: In a medium microwave-safe bowl, combine glutinous rice flour and sugar. Whisk in water until smooth. Cover the bowl with a wet paper towel and microwave the mixture for 1 minute. Remove and stir, then repeat microwaving and stirring two more times until the dough becomes thick and sticky. Allow the mochi to cool for 5-10 minutes before handling.
- Shape the Mochi: Dust a work surface and the mochi dough with cornstarch. Roll out the dough into a circle about 1/6-inch thick. Use a pastry brush to remove excess cornstarch. Cut the dough into four equal portions.
- Wrap the Peaches: Place one peach half in the center of each mochi portion. Carefully pull the dough edges over the peach to completely enclose it. Dust the finished mochi with cornstarch and brush off any excess. Place seam-side down to set. Repeat with remaining dough and peach halves.
