Ingredients
Hot Honey
- ½ cup honey
- ½ tablespoon apple cider vinegar
- ½ tablespoon hot sauce (Sriracha or similar)
- 1½ teaspoons garlic, minced
- ½ teaspoon red pepper flakes
Whipped Feta Crostini
- 1 (4-ounce) container feta cheese crumbles
- ¼ cup cream cheese
- ¼ cup cottage cheese
To Assemble
- 24 toasted baguette slices, bagel chips, or crackers
- ½ cup pecans, chopped
- 3–4 sprigs fresh rosemary, torn
Instructions
- Prepare the Hot Honey: In a small saucepan, combine the honey, apple cider vinegar, hot sauce, minced garlic, and red pepper flakes. Heat over low until just simmering, then remove from heat and allow to cool to room temperature, letting the flavors meld.
- Make the Whipped Feta: While the hot honey cools, add the feta cheese crumbles, cream cheese, and cottage cheese to the bowl of a food processor. Pulse to combine, then blend until smooth and creamy, pausing to scrape down the sides as needed. Transfer the whipped feta to a small bowl.
- Toast the Bread: If not already toasted, bake or toast 24 baguette slices, bagel chips, or crackers until crisp and golden brown for a perfect crunchy base.
- Assemble the Crostini: Spread a generous spoonful of whipped feta on each toasted baguette slice. Arrange the crostini in a single layer on a serving platter.
- Garnish and Drizzle: Sprinkle chopped pecans and torn fresh rosemary over the crostini for added texture and aroma. Drizzle the cooled hot honey evenly over each crostini just before serving.
- Serve and Enjoy: Present immediately for the best texture and flavor, or prepare the whipped feta and hot honey up to a day ahead for convenience. Store hot honey at room temperature in a sealed container, and keep the whipped feta refrigerated until ready to use.
Notes
- You can prepare the whipped feta and hot honey one day ahead to save time before serving.
- Store hot honey in an airtight container at room temperature.
- Keep whipped feta refrigerated and allow to come slightly to room temperature before serving for easier spreading.
- Use toasted baguette slices, bagel chips, or crackers depending on preference and availability.
- Adjust the amount of Sriracha or red pepper flakes in the hot honey to control the heat level.
- Fresh rosemary adds a lovely aroma but can be substituted with thyme or omitted if not available.
