  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 1 tablespoon cornstarch (mixed with 2 tablespoons water)

  • Pomegranate seeds (for garnish)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the Chicken: Season the chicken thighs or breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat to get ready for searing.
  2. Cook the Chicken: Place the chicken in the heated skillet and cook for 5-7 minutes on each side until golden brown and fully cooked through. Remove the chicken from the skillet and set it aside to rest.
  3. Make the Pomegranate Sauce: In the same skillet, add pomegranate juice, honey, soy sauce, apple cider vinegar, minced garlic, and grated ginger. Bring the mixture to a simmer over medium heat. Stir in the cornstarch mixed with water and cook for an additional 2-3 minutes to thicken the sauce.
  4. Combine and Serve: Return the cooked chicken to the skillet, coating it well with the sticky pomegranate sauce. Cook together for 2-3 minutes to heat through. Remove from heat and garnish with fresh pomegranate seeds and chopped parsley. Serve the dish warm, ideally alongside rice or your favorite side.

Notes

  • You can use chicken breasts instead of thighs, but thighs remain juicier and more flavorful.
  • Adjust the honey quantity to make the sauce sweeter or less sweet according to your preference.
  • To make the sauce thicker, increase cornstarch slightly but add gradually to avoid clumping.
  • Use fresh pomegranate juice for the best taste, but bottled juice works as well.
