Instructions

  1. Prepare Muffin Pan: Spray a 9-cup muffin pan with cooking spray to prevent sticking.
  2. Soften Cream Cheese Mixture: Microwave the cream cheese in 10-second intervals until soft and slightly melted, but not steaming. Add the egg, olive oil, and dried dill to the cream cheese and mix thoroughly until well combined.
  3. Combine Filling Ingredients: In a separate bowl, mix together the chopped fresh spinach, crumbled feta, and bacon bits. Pour in the cream cheese mixture, season with salt and pepper, and use a fork to mix everything evenly.
  4. Prepare Puff Pastry Cups: Cut the thawed puff pastry sheet into 9 equal squares. Gently stretch and press each square into the bottom and sides of each muffin cup to form a pastry cup.
  5. Fill and Seal Puffs: Evenly divide the spinach and cheese filling among the pastry-lined cups. Bring the four corners of each pastry square together over the filling, pinching the edges to seal. Lightly brush the tops with melted butter.
