Instructions
- Prepare Muffin Pan: Spray a 9-cup muffin pan with cooking spray to prevent sticking.
- Soften Cream Cheese Mixture: Microwave the cream cheese in 10-second intervals until soft and slightly melted, but not steaming. Add the egg, olive oil, and dried dill to the cream cheese and mix thoroughly until well combined.
- Combine Filling Ingredients: In a separate bowl, mix together the chopped fresh spinach, crumbled feta, and bacon bits. Pour in the cream cheese mixture, season with salt and pepper, and use a fork to mix everything evenly.
- Prepare Puff Pastry Cups: Cut the thawed puff pastry sheet into 9 equal squares. Gently stretch and press each square into the bottom and sides of each muffin cup to form a pastry cup.
- Fill and Seal Puffs: Evenly divide the spinach and cheese filling among the pastry-lined cups. Bring the four corners of each pastry square together over the filling, pinching the edges to seal. Lightly brush the tops with melted butter.
- Bake the Puffs: Place the muffin pan in a preheated oven at 400°F (200°C) and bake for about 20 minutes or until the pastry is golden brown and puffed.
