- 4 ounces cream cheese, cubed
- 1/3 cup cotija cheese or feta
Vegetables and Seasonings
- 2 cups corn (frozen, canned, or fresh grilled)
- Juice of 1 lime
- 2 cloves garlic, minced
- 1/2 teaspoon chili powder
- Optional: 1/2 teaspoon smoked paprika
- Optional: fresh cilantro for garnish
- Optional: 1/2 teaspoon onion powder
Instructions
- Prepare the Slow Cooker: Place the chicken breasts or thighs in the bottom of your slow cooker, ensuring they are arranged in a single layer for even cooking.
- Add the Ingredients: Layer the corn, cubed cream cheese, cotija cheese, lime juice, minced garlic, chili powder, and any optional seasonings such as smoked paprika or onion powder on top of the chicken.
- Cook: Cover the slow cooker and cook on low heat for 4-5 hours or on high heat for 2-3 hours, until the chicken is fully cooked through and tender.
