Slow Cooker Pineapple Pork Loin Recipe

  • Author: Harper
  • Total Time: 6 hours 15 minutes to 10 hours 15 minutes
  • Yield: 6 servings 1x

Description

This Slow Cooker Pineapple Pork Loin is a tender, flavorful dish where succulent pork loin is slow-cooked with a sweet and tangy pineapple sauce. The pork is first seared for a golden crust, then slow-cooked with soy sauce, brown sugar, garlic, and pineapple chunks, resulting in a juicy, melt-in-your-mouth meal perfect for an easy dinner.

Ingredients

Scale

Pork Loin

  • 23 lb pork loin (trimmed of excess fat)
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil

Sauce and Seasoning

  • 8 cloves garlic (minced)
  • 1/4 cup soy sauce
  • 1/2 cup brown sugar
  • 1 (23.5 ounces) can pineapple chunks with juice

Instructions

  1. Trim the Pork: Trim pork loin of any excess fat and season generously with salt and pepper. Set it aside while you prepare the pan.
  2. Sear the Pork: Heat a large pan over medium-high heat and add the vegetable oil. When the oil is hot, add the pork loin and sear it for 2-4 minutes on each side until golden brown, locking in flavor and moisture.
  3. Add to Slow Cooker: Transfer the seared pork loin to the slow cooker. Rub the minced garlic all over the pork. Pour the soy sauce and pineapple chunks with their juice evenly over the pork. Sprinkle the brown sugar across the top to balance the tangy and savory flavors.
  4. Slow Cook: Cover the slow cooker with the lid and cook on low for 6 hours. This will give you a pork loin that is soft but still sliceable.
  5. Optional Extra Soft Pork: For shredded pineapple pork, cook on low for 8-10 hours instead. Lift the lid a few times during cooking and use a ladle to baste the pork with the cooking juices to keep it moist. Once tender, shred the pork, return it to the slow cooker, and cook for an additional hour on low to let the flavors meld.
  6. Serve: Once cooked to your liking, serve the pineapple pork loin warm, spooning some of the sweet pineapple sauce over the top for a complete and satisfying meal. Enjoy!

Notes

  • Trimming excess fat helps reduce greasiness and ensures even cooking.
  • Searing the pork loin before slow cooking locks in moisture and adds a depth of flavor.
  • Basting during the longer slow cooking process keeps the pork moist and tender.
  • You can serve this pork with rice, steamed vegetables, or in sandwich buns for pulled pork style meals.
  • Adjust brown sugar quantity based on your sweetness preference.
