Ingredients
Scale
Marinade
- 1/2 cup Soy Sauce (low-sodium if preferred)
- 4 cloves Garlic (minced)
- 1/4 cup Brown Sugar (or substitute with honey)
- 1 teaspoon Black Pepper (adjust to taste)
- 1/4 cup Calamansi Juice (or lemon juice)
- 2 tablespoons Vegetable Oil (olive oil works as well)
Main
- 2 pounds Pork Shoulder Butt (well-marbled)
- 1 cup Bell Peppers (cut into chunks)
- 1 cup Onions (cut into chunks)
Instructions
- Prepare the marinade: In a large bowl, mix together the soy sauce, minced garlic, brown sugar, black pepper, calamansi juice, and vegetable oil until fully combined to create a flavorful marinade.
- Marinate the pork: Add the pork shoulder butt pieces to the marinade and toss thoroughly to ensure each piece is well-coated. Cover the bowl and refrigerate for at least 3 hours, but preferably overnight, to allow the flavors to deeply infuse the meat.
- Preheat the grill: Just before cooking, heat your grill to a medium-high temperature, creating an ideal surface for searing the pork.
- Assemble the skewers: Thread the marinated pork pieces alternately with chunks of bell peppers and onions onto skewers, leaving some space between pieces for even cooking.
- Grill the skewers: Place the skewers on the preheated grill and cook for approximately 3 to 5 minutes per side, turning carefully to prevent burning, until the pork is thoroughly cooked and caramelized on the outside.
- Rest and serve: Remove the skewers from the grill and let them rest for a few minutes to allow juices to redistribute before serving.
Notes
- For extra flavor, marinate the pork overnight if possible.
- Soak wooden skewers in water for 30 minutes beforehand to prevent burning on the grill.
- Adjust the amount of calamansi or lemon juice based on your preferred level of tanginess.
- Serve with steamed rice or a side of pickled vegetables for a complete Filipino-inspired meal.
- If you don’t have calamansi juice, freshly squeezed lemon juice is a perfect substitute.
