Sausage and Cooking Base

Soup Base

  • 4 cups chicken broth
  • 3 cups diced potatoes (about 34 medium-sized potatoes)
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Finishing Ingredients

  • 2 cups kale or spinach, roughly chopped
  • 1 cup heavy cream
  • Optional: grated Parmesan cheese for serving

Instructions

  1. Cook the sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a wooden spoon as it cooks. Remove the cooked sausage from the pot and set aside.
  2. Sauté the aromatics: In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute.
  3. Simmer the vegetables: Pour in the chicken broth and bring to a simmer. Add diced potatoes, carrots, celery, oregano, thyme, salt, and pepper. Cook for about 15-20 minutes until the vegetables are tender.
  4. Add sausage and greens: Return the cooked sausage to the pot. Add the chopped kale or spinach and cook until wilted, about 2-3 minutes.
  5. Finish with cream: Stir in the heavy cream and simmer for another 5 minutes. Taste and adjust seasoning with salt and pepper if needed.
  6. Serve: Ladle the soup into bowls and optionally garnish with grated Parmesan cheese. Serve hot.

  • You can substitute kale with spinach or other leafy greens based on preference.
  • For a lighter version, replace heavy cream with half-and-half or omit it entirely.
