This Rotisserie Chicken Casserole is a comforting, creamy, and easy-to-make dish that combines shredded rotisserie chicken with tender egg noodles, a cheesy sauce, peas and carrots, and a crunchy buttery cracker topping. Perfect for a weeknight dinner or make-ahead meal, it bakes into a bubbly golden delight everyone will enjoy.

Ingredients

Scale

Protein and Pasta

  • 4 cups cooked rotisserie chicken, shredded
  • 8 oz egg noodles, cooked and drained

Vegetables

  • 1 cup frozen peas and carrots, thawed

Sauce

  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Cheese and Topping

  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 cup crushed butter crackers (like Ritz)
  • 2 tablespoons melted butter

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray to prevent sticking and help achieve golden edges on the casserole.
  2. Cook the Noodles: Bring a pot of salted water to a boil and cook the egg noodles according to package directions until just al dente. Drain and set aside to prevent overcooking during baking.
  3. Mix the Sauce: In a large bowl, combine the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and black pepper. Stir well to create a creamy, flavorful sauce. Taste and adjust seasonings if needed.
  4. Combine Everything: Add the shredded rotisserie chicken, cooked noodles, and thawed peas and carrots into the sauce mixture. Stir thoroughly to evenly coat all ingredients. Fold in 1 cup of shredded cheddar cheese.
  5. Assemble the Casserole: Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top. In a small bowl, mix the crushed butter crackers with melted butter, then sprinkle this topping over the cheese layer for a crunchy finish.
  6. Bake and Serve: Bake for approximately 30 minutes or until the cheese is bubbly and golden brown. Remove from the oven and let rest for 5–10 minutes to set before serving, which ensures cleaner slices and a creamier texture.

Notes

  • This casserole can be made ahead of time; assemble and refrigerate covered for up to 24 hours before baking.
  • For longer storage, freeze the unbaked casserole for up to 2 months. Thaw overnight in the refrigerator before baking as directed.
  • Using rotisserie chicken saves time and adds delicious flavor.
  • Adjust seasoning according to your taste preference, especially salt and pepper.
  • The cracker topping adds a wonderful crunchy texture contrast but can be omitted for a softer topping.
