Ingredients
Scale
Cheese
- 1 13.2 oz brie round
Berry Mixture
- 6 ounces blackberries
- 6 ounces blueberries
- 1 tablespoon brown sugar
- 3 tablespoons coconut oil
- 1 teaspoon fresh rosemary (finely chopped)
Garnish
- Extra fresh rosemary for garnish
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the brie and berry mixture.
- Prepare the brie: Line a baking dish with parchment paper and place the entire brie wheel on top. Do not cut the top off the brie round; keeping it intact helps the cheese maintain its shape during baking. Set aside the baking dish with the brie.
- Prepare the berry topping: In a small baking dish or pie dish, combine the blackberries and blueberries. Sprinkle the berries with the brown sugar, drizzle with the coconut oil, and sprinkle the finely chopped rosemary over them. Gently mix everything together to ensure all berries are coated evenly with the sugar, oil, and rosemary.
- Bake the brie and berries: Place both the baking dish with the brie and the dish with the berry mixture into the preheated oven. Bake for 15 to 20 minutes until the brie is soft and melty, and the berries are tender and slightly bubbling.
- Assemble and garnish: Carefully remove both dishes from the oven. Transfer the baked brie to a serving plate, then spoon the warm berry mixture over the top of the brie. Garnish with extra fresh rosemary sprigs for a fragrant, attractive finish.
- Serve: Serve the baked brie immediately while warm. It pairs wonderfully with crackers, sliced apples, fresh warm bread, or banana chips for dipping and spreading.
Notes
- Do not cut the top of the brie as it needs to stay intact to hold its shape while baking.
- Use fresh rosemary for the best aroma and flavor.
- Serve immediately to enjoy the brie while it is melted and gooey.
- You can substitute coconut oil with butter or olive oil if desired.
- Try adding a splash of balsamic vinegar or a drizzle of honey on top of the berries for an extra flavor dimension.
