Description

This Overnight Blueberry French Toast Casserole is a delightful and easy-to-make breakfast dish featuring a creamy custard soaked French bread base studded with fresh blueberries. The casserole is prepared the night before, allowing the bread to soak up a rich mixture of cream cheese, eggs, milk, and spices, resulting in a perfect balance of creamy, fruity, and comforting flavors. It’s baked until golden brown and is perfect for family brunches or special mornings.

Ingredients

Scale

Cream Cheese Mixture

  • 8 ounces softened cream cheese
  • 1 cup powdered sugar
  • 1 cup milk (divided)
  • 1 teaspoon vanilla extract (divided)

Bread Mixture

  • 2 loaves cubed French bread
  • 1 cup blueberries (divided)

Custard Mixture

  • 1 cup milk (remaining)
  • 8 eggs
  • 1 teaspoon cinnamon powder
  • ½ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract (remaining)

Topping

  • 1 cup blueberries (remaining)

Instructions

  1. Prepare cream cheese mixture: In a mixing bowl, blend softened cream cheese with powdered sugar, 1 cup milk, and half of the vanilla extract until the mixture is smooth and creamy.
  2. Combine bread and blueberries: In another large bowl, mix the cubed French bread with half of the blueberries. Pour the cream cheese mixture over the bread and blueberries, then gently fold together until the cubes are evenly coated. Transfer this mixture to a greased baking dish, spreading it out evenly.
  3. Make custard mixture: In a separate bowl, whisk together the remaining 1 cup of milk, eggs, cinnamon powder, nutmeg, and the remaining vanilla extract until well combined.
  4. Combine custard with bread: Pour the custard mixture evenly over the bread and cream cheese mixture in the baking dish.
  5. Top and refrigerate: Sprinkle the remaining blueberries evenly on top. Cover the casserole with plastic wrap or foil, then refrigerate overnight to allow the bread to soak the custard fully.
  6. Bake: Preheat the oven to 350°F (175°C). Remove the cover from the casserole and bake for about 75 minutes or until the top is golden brown and the custard is set.
  7. Serve: Allow the casserole to cool slightly before serving warm for a rich and flavorful breakfast treat.

Notes

  • Be sure to use day-old or slightly stale French bread for the best texture and absorption.
  • You can substitute fresh or frozen blueberries; if using frozen, do not thaw before adding to avoid excess moisture.
  • For extra flavor, add a sprinkle of powdered sugar or maple syrup when serving.
  • This casserole can be prepared a day ahead but avoid refrigerating beyond 24 hours to maintain freshness.
  • Use a 9×13 inch baking dish for optimal layering and baking.
