Description
No-Bake Chocolate Coconut Macaroons are a simple, delicious dessert combining the chewy texture of shredded coconut with rich semi-sweet chocolate. These easy-to-make macaroons require no baking and can be prepared quickly, perfect for satisfying sweet cravings or impressing guests. They are naturally gluten-free and customizable to suit dietary preferences.
Ingredients
Scale
Macaroon Mixture
- 2 1/2 cups shredded unsweetened coconut
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Chocolate Coating
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil (optional, for melting chocolate)
Instructions
- Prepare the Mixture: In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix thoroughly until all ingredients are evenly incorporated into a sticky mixture.
- Shape the Macaroons: Using your hands or a small cookie scoop, form the mixture into small balls or mounds. Place them on a parchment-lined baking sheet, packing them tightly to help them hold their shape during chilling.
- Chill: Place the baking sheet with the formed macaroons into the refrigerator for about 30 minutes to allow them to firm up and hold their shape.
- Melt the Chocolate: In a microwave-safe bowl, combine semi-sweet chocolate chips and coconut oil if using. Microwave in 30-second intervals, stirring in between until the chocolate is fully melted and smooth.
- Dip the Macaroons: Remove the macaroons from the refrigerator once firm. Dip the bottoms of each macaroon into the melted chocolate or drizzle chocolate on top, then place them back onto the parchment-lined baking sheet.
- Chill Again: Return the macaroons to the refrigerator for an additional 15 to 20 minutes to allow the chocolate to set firmly before serving.
Notes
- Use sweetened shredded coconut if preferred, but reduce sweetened condensed milk to balance sweetness.
- Pack the mixture tightly to prevent macaroons from falling apart.
- For a vegan version, substitute sweetened condensed milk with a vegan alternative and use dairy-free chocolate chips.
- Store macaroons in an airtight container in the refrigerator for up to 1 week or freeze for longer storage, separating layers with parchment paper.
- Try different chocolate types or add chopped nuts, dried fruits, or sea salt for added flavors.
