Instructions

  1. Prepare the Mixture: In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix thoroughly until all ingredients are evenly incorporated into a sticky mixture.
  2. Shape the Macaroons: Using your hands or a small cookie scoop, form the mixture into small balls or mounds. Place them on a parchment-lined baking sheet, packing them tightly to help them hold their shape during chilling.
  3. Chill: Place the baking sheet with the formed macaroons into the refrigerator for about 30 minutes to allow them to firm up and hold their shape.
  4. Melt the Chocolate: In a microwave-safe bowl, combine semi-sweet chocolate chips and coconut oil if using. Microwave in 30-second intervals, stirring in between until the chocolate is fully melted and smooth.
