Instructions

  1. Mix Butter and Sugar: In a large bowl, beat the softened butter until fluffy. Add sugar, baking powder, and salt, mixing well until fully combined using a stand mixer with paddle attachment or an electric mixer. If using a handheld mixer, finish mixing with a wooden spoon if needed.
  2. Add Eggs and Vanilla: Mix in the egg, egg yolks, and pure vanilla extract until the mixture is fully combined, scraping down the bowl sides to incorporate everything evenly.
  3. Incorporate Flour: Gradually mix in all-purpose flour until a soft dough forms, ensuring it is well combined but not overworked.
  4. Prepare Mint Dough: Remove ¾ cup of the dough into a small bowl. Add the peppermint oil or mint extract and a few drops of green food coloring, mixing thoroughly to achieve a uniform green mint dough color.
  5. Form Dough Balls: Measure 1 tablespoon portions of the plain dough and roll into 25 balls. Measure 1 teaspoon portions of the mint dough and roll into 25 smaller balls to match the number of plain dough balls.
  6. Assemble Cookies: Flatten each plain dough ball and place a mint dough ball in the center. Mold the plain dough around the mint ball to encase it fully, forming a smooth, round ball.
  7. Decorate Cookies: Immediately roll each assembled dough ball in a mix of green and white nonpareil sprinkles until fully coated. Place the coated dough balls on a baking sheet lined with parchment paper, spacing them evenly.
  8. Bake: Preheat the oven to 375°F (190°C). Bake the cookies for 10 to 11 minutes until set but not browned.
