Description

Mediterranean Quesadillas with Spinach, Feta, Mozzarella, and Red Onion offer a quick, easy, and flavorful twist on classic quesadillas. Combining fresh spinach, creamy feta, gooey mozzarella, and tangy red onion, these quesadillas are perfect for a nutritious lunch or dinner. Cooked in a non-stick skillet to golden perfection, they can be customized for vegan and gluten-free diets and paired with a variety of Mediterranean-inspired sides.

Ingredients

Scale

For the Quesadillas

  • 4 flour tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for frying)

Instructions

  1. Prepare the Filling: In a mixing bowl, combine 1/2 cup shredded mozzarella cheese, 1/2 cup crumbled feta cheese, 1 cup chopped fresh spinach, 1 small diced tomato, 1/4 cup thinly sliced red onion, and 1/4 teaspoon black pepper. Stir until well mixed.
  2. Assemble the Quesadilla: Lay one tortilla flat on a clean surface. Evenly distribute one-fourth of the filling mixture onto half of the tortilla. Fold the tortilla over to completely cover the filling.
  3. Cook the Quesadilla: Heat a non-stick skillet over medium heat. Add 1 tablespoon olive oil and let it warm. Carefully place the folded tortilla in the skillet. Cook for about 3-4 minutes on one side, pressing gently with a spatula to encourage even melting and browning.
  4. Flip and Finish Cooking: Using a spatula, carefully flip the quesadilla. Cook for another 3-4 minutes until both sides are golden brown and crispy.
  5. Serve: Remove the quesadilla from the skillet and let it cool slightly. Slice into wedges and serve warm, optionally with your favorite dipping sauce or fresh salad.

Notes

  • Use fresh spinach and quality cheeses for best flavor.
  • Avoid overfilling the tortilla to simplify cooking and flipping.
  • Cook on medium heat to prevent burning and ensure even melting.
  • Substitute cheeses like goat cheese or provolone for a flavor variation.
  • Use fresh tortillas to avoid breakage or chewiness.
