Instructions
- Prepare the filling: In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix well to ensure all ingredients are evenly distributed.
- Assemble the quesadillas: Lay one flour tortilla flat on a clean surface. Spoon one-fourth of the filling mixture onto half of the tortilla, spreading it evenly. Fold the other half of the tortilla over the filling to create a half-moon shape.
- Heat the skillet: Place a non-stick skillet over medium heat and add the olive oil, allowing it to warm up without smoking.
- Cook the first side: Carefully transfer the filled tortilla to the skillet and cook for about 3 to 4 minutes until the bottom is golden brown and crispy.
- Flip and cook the other side: Using a spatula, carefully flip the quesadilla and cook for another 3 to 4 minutes until the second side is also golden and crispy and the cheese inside has melted.
- Serve: Remove the quesadilla from the skillet. Let it cool for a minute, then slice into wedges. Serve warm for the best flavor and texture.
