Instructions

  1. Prepare the filling: In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix well to ensure all ingredients are evenly distributed.
  2. Assemble the quesadillas: Lay one flour tortilla flat on a clean surface. Spoon one-fourth of the filling mixture onto half of the tortilla, spreading it evenly. Fold the other half of the tortilla over the filling to create a half-moon shape.
  3. Heat the skillet: Place a non-stick skillet over medium heat and add the olive oil, allowing it to warm up without smoking.
  4. Cook the first side: Carefully transfer the filled tortilla to the skillet and cook for about 3 to 4 minutes until the bottom is golden brown and crispy.
  5. Flip and cook the other side: Using a spatula, carefully flip the quesadilla and cook for another 3 to 4 minutes until the second side is also golden and crispy and the cheese inside has melted.
  6. Serve: Remove the quesadilla from the skillet. Let it cool for a minute, then slice into wedges. Serve warm for the best flavor and texture.
