Stuffing Muffins

  • 4 ½ cups leftover stuffing
  • 3 whole milk mozzarella cheese sticks, each cut into quarters (use 10 of the 12 pieces)
  • Optional toppings: maple syrup, hot sauce, etc.

Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat your oven to 425 degrees Fahrenheit. Grease a 12-slot non-stick muffin tin well with cooking spray and set it aside to get ready for the stuffing mixture.
  2. Mix Eggs and Seasonings: In a large mixing bowl, whisk together 5 large eggs, ¼ cup finely grated parmesan cheese, 2 tablespoons milk, ¼ teaspoon salt, and ¼ teaspoon pepper until the mixture is smooth and fully combined.
  3. Combine with Stuffing: Stir 4 ½ cups of leftover stuffing into the egg mixture thoroughly, ensuring all the stuffing is moistened and blended evenly.
  4. Fill Muffin Cups and Add Cheese: Using a ⅓ cup measuring cup, fill 10 of the muffin tin slots with the stuffing mixture. Then, press one quartered piece of mozzarella cheese stick into the center of each muffin, making sure it is fully covered by the stuffing.
  5. Bake the Muffins: Place the muffin tin in the preheated oven and bake for 20 to 25 minutes until the eggs are set through and the muffin edges turn crispy and golden brown.
  6. Cool and Serve: Remove the muffins from the oven and let them cool slightly before serving. Enjoy warm, optionally topping with maple syrup or hot sauce for extra flavor.
