Description

These Japanese Cheesecake Ice Cream Sandwiches combine creamy, cultured Lifeway Farmer Cheese with almond butter, maple syrup, and fresh strawberries, sandwiched between crunchy cinnamon-flavored cookies. This no-bake, frozen treat offers a delightful balance of sweet, fruity, and tangy flavors with a creamy texture reminiscent of Japanese cheesecake, making it a refreshing dessert perfect for any occasion.

Ingredients

Scale

Filling

  • 1/31/2 cup Lifeway Farmer Cheese
  • 2 tbsp almond butter
  • 1 tbsp pure maple syrup
  • 1/31/2 cup sliced strawberries

Sandwich Base

  • 8 Biscoff cookies or other cinnamon-flavored cookies

Instructions

  1. Prepare the Cheesecake Mixture: Add the Lifeway Farmer Cheese, almond butter, and maple syrup to a food processor. Process the ingredients until fully combined and smooth, creating a creamy cheesecake-like filling.
  2. Line Container and Arrange Base Cookies: Line a small rectangular container with parchment paper. Place 4 cookies in the container in a 2 by 2 arrangement, forming the base layer for the ice cream sandwiches.
  3. Assemble the Filling Layers: Evenly spread 1/4 of the farmer cheese mixture onto each of the 4 base cookies (approximately 1/8 cup or 2 tablespoons per cookie). Then evenly distribute 1/4 of the sliced strawberries on top of each layer of cheese filling.
  4. Complete the Sandwiches: Place the remaining 4 cookies on top of the prepared cookies, pressing down slightly to seal the sandwiches together.
  5. Freeze and Serve: Freeze the assembled sandwiches for 4 hours until fully set. When ready to serve, remove from the freezer and let thaw for about 10 minutes to soften slightly. Enjoy as is or slice before serving.
