Strawberry Puree

  • ¼ cup chopped fresh strawberries
  • 1 tbsp granulated sugar
  • 1 tbsp cold water

Instructions

  1. Prepare Matcha: Add 3 tablespoons of water to a microwave-safe jar or glass and heat until boiling, about 30-45 seconds. Sift 1 ½ teaspoons of pure matcha powder into the hot water to remove clumps. Whisk thoroughly until the mixture is smooth and slightly foamy. Stir in 1 cup of your preferred milk (2% recommended) and set aside.
  2. Make Cold Foam: In a small glass or jar, combine 2 tablespoons of heavy cream, 2 tablespoons of raspberry syrup, and 1 tablespoon of whole milk. Use a milk frother to froth the mixture for 20-30 seconds until light and foamy. Set aside.
  3. Blend Strawberry Puree: Place ¼ cup chopped fresh strawberries, 1 tablespoon granulated sugar, and 1 tablespoon cold water into a high-speed blender. Blend until completely smooth. Pour the puree into a glass over ice.
