Instructions
- Prepare Chocolate Base: Place 2 cups of white chocolate pieces into a medium bowl and set aside.
- Infuse Cream: Combine ½ cup heavy cream and 5 teaspoons dried culinary lavender in a small saucepan. Heat over medium-low heat until bubbles appear around the edges, then remove from heat and allow to steep for 5 minutes to infuse the lavender flavor.
- Strain and Melt: Strain the lavender-infused cream into the bowl with the white chocolate pieces. Melt the chocolate mixture by microwaving in 15-second increments, stirring after each, or by using a bain-marie, until the mixture is smooth and fully melted.
- Add Honey and Coloring: Stir in 2 tablespoons honey to the melted mixture. If desired, add one drop each of violet, royal blue, and super red food coloring and mix well to achieve a subtle tint.
- Chill Mixture: Pour the chocolate mixture into a clean pan and cover with plastic wrap. Refrigerate for about 3 hours or until the mixture is firm and set.
- Portion Truffles: Use a small cookie scoop or a 1½ teaspoon measuring spoon to scoop out portions of the set mixture. Coat your hands lightly with powdered sugar and roll each portion into a smooth ball.
- Freeze Truffles: Place the rolled truffles in the freezer for 15-20 minutes until cold and firm for dipping.
- Dip in White Chocolate: Dip each chilled truffle into melted or tempered white chocolate, then place them on a parchment paper-lined sheet pan.
