Perfect for a sophisticated dessert or a luxurious treat that sets beautifully in the refrigerator and is finished by dipping in smooth white chocolate.

Ingredients

Scale

Main Ingredients

  • 2 cups white chocolate pieces
  • ½ cup heavy cream
  • 5 teaspoons dried culinary lavender
  • 2 tablespoons honey

Optional Ingredients

  • 1 drop violet food coloring (if desired)
  • 1 drop royal blue food coloring (if desired)
  • 1 drop super red food coloring (if desired)

Coating

  • 2 cups white chocolate (melted or tempered for dipping)
  • Powdered sugar (for coating hands)

Instructions

  1. Prepare Chocolate Base: Place 2 cups of white chocolate pieces into a medium bowl and set aside.
  2. Infuse Cream: Combine ½ cup heavy cream and 5 teaspoons dried culinary lavender in a small saucepan. Heat over medium-low heat until bubbles appear around the edges, then remove from heat and allow to steep for 5 minutes to infuse the lavender flavor.
  3. Strain and Melt: Strain the lavender-infused cream into the bowl with the white chocolate pieces. Melt the chocolate mixture by microwaving in 15-second increments, stirring after each, or by using a bain-marie, until the mixture is smooth and fully melted.
  4. Add Honey and Coloring: Stir in 2 tablespoons honey to the melted mixture. If desired, add one drop each of violet, royal blue, and super red food coloring and mix well to achieve a subtle tint.
  5. Chill Mixture: Pour the chocolate mixture into a clean pan and cover with plastic wrap. Refrigerate for about 3 hours or until the mixture is firm and set.
  6. Portion Truffles: Use a small cookie scoop or a 1½ teaspoon measuring spoon to scoop out portions of the set mixture. Coat your hands lightly with powdered sugar and roll each portion into a smooth ball.
  7. Freeze Truffles: Place the rolled truffles in the freezer for 15-20 minutes until cold and firm for dipping.
  8. Dip in White Chocolate: Dip each chilled truffle into melted or tempered white chocolate, then place them on a parchment paper-lined sheet pan.
  9. Set and Serve: Allow the dipped truffles to set at room temperature until the chocolate coating hardens, then serve or store appropriately.

Notes

  • If you prefer, the food coloring can be omitted; these truffles are delicious even without added color.
  • Use good quality white chocolate for best flavor and texture.
  • Tempering the white chocolate for dipping will give the coating a shiny finish and snap.
  • Store truffles in the refrigerator in an airtight container for up to one week.
  • You can substitute honey with maple syrup for a vegan alternative, but the flavor will be slightly different.
