Instructions

  1. Heat the oil: Warm the avocado oil or ghee in a large pot or Dutch oven over medium heat to prepare for searing the chicken.
  2. Sear the chicken: Season the chicken breasts or thighs with salt and pepper generously on both sides. Place them in the hot pot and cook each side for about 4 to 5 minutes until nicely browned. Remove the chicken from the pot and set aside.
  3. Sauté the vegetables: To the same pot, add the diced onion, minced garlic, sliced carrots, and celery. Cook for 2 to 3 minutes until the vegetables become fragrant and slightly softened.
  4. Add broth and seasonings: Return the chicken to the pot along with the chicken broth, bay leaves, turmeric powder, salt, and sprigs of fresh thyme. Bring the mixture to a boil over medium-high heat.
  5. Simmer the soup: Lower the heat to medium-low and let the soup simmer gently for 20 to 25 minutes until the chicken is fully cooked and tender.
  6. Shred the chicken: Remove the cooked chicken from the soup and shred it using two forks. Then, add the shredded chicken back into the pot and stir to combine well.
  7. Finish with herbs and lemon: Turn the heat to low, stir in fresh chopped dill and fresh lemon juice. Taste the soup and adjust seasoning with additional salt, pepper, or lemon juice as needed before serving.
