Ground Turkey Mixture

  • 1 Tbsp sesame oil (or favorite cooking oil)
  • 23 garlic cloves (minced)
  • 2 tsp grated ginger
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp soy sauce (low sodium)
  • 12 Tbsp sriracha
  • 23 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt (more or less to taste)
  • 2 tsp corn starch

Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½1 Tbsp sriracha (adjust to spice preference)
  • 1 tsp rice vinegar
  • 2 tsp honey

Rice Bowl Toppings (optional)

  • Cooked rice
  • Shredded carrots
  • Sliced cucumbers
  • Shelled edamame
  • Pickled onions
  • Avocado
  • Shredded cabbage
  • Sliced green onion
  • Sesame seeds

Instructions

  1. Prep Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey. Whisk well until smooth and balanced. Adjust flavor by adding extra sriracha for more heat or more honey or sweet chili sauce to soften the spice. Chill the sauce until ready to serve.
  2. Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat. Once the oil is glistening hot, add ground turkey and break it into smaller pieces. Cook until fully browned and the internal temperature reaches 165°F, about 7-8 minutes.
  3. Season Turkey Mixture: Reduce heat to medium-low and add minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt to the skillet. Stir to combine all ingredients thoroughly.
  4. Simmer and Thicken: Let the mixture simmer for 2-3 minutes, stirring occasionally to meld flavors. Then sprinkle corn starch over the mixture and stir until it thickens slightly, adding extra sauce-like consistency.
  5. Optional Sauce Addition: Just before serving, stir in about 2 tablespoons of the prepared Bang Bang Sauce into the turkey mixture if desired for extra flavor.
  6. Assemble Rice Bowls: Build the bowls by layering cooked rice, your choice of fresh veggies (shredded carrots, cucumbers, edamame, pickled onions, avocado, cabbage), and spoonfuls of the ground turkey mixture. Drizzle remaining Bang Bang Sauce on top and garnish with sliced green onions and sesame seeds for a vibrant finish.
