Ingredients
Scale
Steak Bites
- 1 tablespoon canola oil
- 2 lbs sirloin steak, cut into bite size pieces (strip loin, strip steak, or rib eye also work great)
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon ground black pepper (or to taste)
Garlic Butter Sauce
- 2 tablespoons unsalted butter
- 1 tablespoon Worcestershire sauce
- 5 cloves garlic, minced
- 2 fresh rosemary sprigs
- 1/4 teaspoon red pepper flakes
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Heat the oil: Place a large cast iron skillet over high heat. Once the skillet is hot, add the canola oil, allowing it to heat until shimmering.
- Cook the beef: Ensure the oil is hot before adding the steak pieces. Season them generously with salt and black pepper. Let the steak cook undisturbed for 2-3 minutes to develop a good sear.
- Flip and cook: Stir or flip the steak pieces and continue cooking for another 2-3 minutes until they turn golden brown and cooked through. Avoid overcrowding the skillet by working in batches if necessary.
- Transfer to a plate: Remove the steak bites from the skillet and place them on a plate. Cover loosely with foil to keep warm.
- Make the sauce: Reduce the skillet heat to medium and add the butter. Once melted, stir in the minced garlic, rosemary sprigs, and red pepper flakes, cooking for about 30 seconds while stirring to release the aromatics.
- Add Worcestershire sauce: Pour in the Worcestershire sauce and stir to combine with the butter and garlic mixture.
- Discard the rosemary: Remove and discard the rosemary sprigs from the skillet to avoid overpowering the flavor.
- Serve: Pour the prepared garlic butter sauce over the steak bites and toss to coat evenly. Garnish with chopped fresh parsley. Serve immediately over mashed potatoes or alongside a fresh salad for a complete meal.
Notes
- Use a cast iron skillet for the best sear and even heat distribution.
- Do not overcrowd the pan to ensure the steak crisps properly instead of steaming.
- Adjust the red pepper flakes to control the spice level according to your preference.
- For a richer flavor, let the steak rest a couple of minutes before serving.
- This recipe can easily be doubled for more servings.
- Sirloin is a lean cut, but rib eye or strip steak adds more marbling for juicier bites.
