  • Pinch of cayenne pepper
  • 1 medium head of broccoli, cut into small florets
  • 1/3 cup vegetable broth
  • 1 (15 oz) can chickpeas, rinsed and drained

  • 1/2 cup water
  • 3 tablespoons soy sauce (gluten-free if needed)
  • 2 tablespoons rice vinegar or balsamic vinegar
  • 2 tablespoons maple syrup or other sweetener
  • 1 tablespoon cornstarch

  • Cooked rice of choice

Instructions

  1. Heat the aromatics: Heat 1 tablespoon of oil in a pan over medium heat. Add the diced onion, minced ginger, minced garlic, onion powder, paprika, smoked paprika, black pepper, sea salt, and a pinch of cayenne pepper. Sauté for 3-4 minutes until the onions soften and the spices are fragrant.
  2. Cook the broccoli: Add broccoli florets and 1/3 cup vegetable broth to the pan. Cook by frying until the broccoli becomes tender but still slightly crisp, about 10 minutes.
  3. Prepare the sauce: While broccoli cooks, whisk together 1/2 cup water, 3 tablespoons soy sauce, 2 tablespoons rice vinegar or balsamic vinegar, 2 tablespoons maple syrup, and 1 tablespoon cornstarch in a medium bowl until smooth and lump-free.
  4. Add sauce and chickpeas: Pour the prepared sauce into the pan with the broccoli and add the rinsed and drained chickpeas.
  5. Simmer the sauce: Bring the mixture to a boil so the sauce can simmer and thicken while frying gently for a few more minutes, ensuring everything is heated through and the chickpeas absorb some flavor.
