  • Author: Harper
  • Total Time: 30 minutes

  • Diet: Vegetarian

Description

Fluffy homemade pancakes made with a simple batter of flour, milk, eggs, and baking powder, cooked on a griddle until golden brown. Perfect for a classic breakfast or brunch, these pancakes are airy, slightly sweet, and easy to prepare in just 30 minutes.

Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar (or to taste)
  • 4 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients

  • 1¾ cups milk (or as needed)
  • 2 large eggs
  • 2 tablespoons melted butter (or vegetable oil)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the griddle or frying pan. Heat your griddle or frying pan over medium heat to about 350°F. Lightly grease it with butter or vegetable oil to prevent sticking.
  2. Mix wet ingredients. In a medium bowl, whisk together the milk, eggs, melted butter, and vanilla extract until well combined.
  3. Combine dry ingredients. In a separate bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt to evenly distribute the leavening agents.
  4. Make the batter. Create a well in the center of the dry ingredients and pour in the wet mixture. Gently stir the batter until just combined; it should remain slightly lumpy to ensure fluffy pancakes.
  5. Cook the pancakes. Pour about ¼ cup of batter onto the heated griddle for each pancake. Cook for approximately 2 minutes or until bubbles form and begin to pop on the surface. Flip and cook for an additional 1-2 minutes until both sides are golden brown and the pancake is cooked through.
  6. Serve warm. Transfer the cooked pancakes to a serving plate or keep warm in a low oven while you cook the remaining batter. Serve immediately with your favorite toppings.

Notes

  • Do not overmix the batter; a few lumps are okay to keep the pancakes fluffy.
  • If the batter is too thick, add a splash more milk to reach the desired consistency.
  • Use a non-stick griddle or pan for best results to prevent sticking.
  • Keep cooked pancakes warm in a low oven (around 200°F) while finishing the batch.
  • Optional toppings include maple syrup, fresh fruit, butter, or whipped cream.
