Ingredients
Scale
Dry Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar (or to taste)
- 4 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Wet Ingredients
- 1¾ cups milk (or as needed)
- 2 large eggs
- 2 tablespoons melted butter (or vegetable oil)
- 1 teaspoon vanilla extract
Instructions
- Preheat the griddle or frying pan. Heat your griddle or frying pan over medium heat to about 350°F. Lightly grease it with butter or vegetable oil to prevent sticking.
- Mix wet ingredients. In a medium bowl, whisk together the milk, eggs, melted butter, and vanilla extract until well combined.
- Combine dry ingredients. In a separate bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt to evenly distribute the leavening agents.
- Make the batter. Create a well in the center of the dry ingredients and pour in the wet mixture. Gently stir the batter until just combined; it should remain slightly lumpy to ensure fluffy pancakes.
- Cook the pancakes. Pour about ¼ cup of batter onto the heated griddle for each pancake. Cook for approximately 2 minutes or until bubbles form and begin to pop on the surface. Flip and cook for an additional 1-2 minutes until both sides are golden brown and the pancake is cooked through.
- Serve warm. Transfer the cooked pancakes to a serving plate or keep warm in a low oven while you cook the remaining batter. Serve immediately with your favorite toppings.
Notes
- Do not overmix the batter; a few lumps are okay to keep the pancakes fluffy.
- If the batter is too thick, add a splash more milk to reach the desired consistency.
- Use a non-stick griddle or pan for best results to prevent sticking.
- Keep cooked pancakes warm in a low oven (around 200°F) while finishing the batch.
- Optional toppings include maple syrup, fresh fruit, butter, or whipped cream.
