Instructions

  1. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and fine sea salt until well combined.
  2. Mix Wet Ingredients: In a separate jug or bowl, whisk together the buttermilk, large egg, melted and cooled unsalted butter, and vanilla extract until smooth.
  3. Combine Batter: Pour the wet ingredients into the dry ingredients. Gently whisk until just combined, being careful not to over-mix—the batter should remain slightly lumpy. Let the batter rest for 5 minutes to hydrate the flour and improve texture.
  4. Prepare for Shaping: Transfer approximately half of the batter into a squeeze bottle with a wide tip. This will be used to add detailing for the bunny shapes.
  5. Heat Griddle: Heat a non-stick griddle or skillet over medium-low heat, making sure it’s hot but not too hot to prevent burning.
  6. Cook Bunny Shapes: For each bunny, pour a 4-inch circle on the griddle for the body and a 3-inch circle for the head. Use the squeeze bottle to draw two long oval ears and two 1.5-inch circles for the paws. Cook until bubbles form on the surface and edges look set.
