Ingredients
Scale
Dry Ingredients
- 1½ cups plus 1 tablespoon all purpose flour, spooned and leveled
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Wet Ingredients
- ½ cup unsalted butter, softened but still cool
- ½ cup granulated sugar
- ⅓ cup brown sugar, lightly packed, fresh and soft
- 1 large egg, cold, straight from the fridge
- 2 teaspoons pure vanilla extract
Add-ins and Toppings
- ¾ cup Easter/spring M&M’s, plus extra for topping (optional)
- ½ cup white chocolate chips or chunks, plus extra for topping (optional)
- ¼ cup pastel sprinkles
Instructions
- Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent sticking and make cleanup easy.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until fully combined. Set this mixture aside.
- Cream Butter and Sugars: In another large bowl, use a hand mixer or a stand mixer fitted with the paddle attachment to beat the softened butter, granulated sugar, and brown sugar together for 1 to 2 minutes until light and fluffy.
- Add Egg and Vanilla: Beat in the cold egg and pure vanilla extract until the ingredients are well combined, stopping occasionally to scrape the bowl sides to incorporate everything evenly.
- Combine Dry and Wet Mixtures: On low speed, gradually add the flour mixture to the butter mixture. Mix only until just combined, being careful not to overmix to keep the cookies tender.
- Fold in M&M’s and White Chocolate Chips: Gently stir in the Easter-themed M&M’s and white chocolate chips, distributing them evenly throughout the dough.
- Prepare Sprinkles: Pour the pastel sprinkles into a shallow bowl for easy dipping.
- Scoop and Coat the Dough: Using a tablespoon or small cookie scoop, portion out dough balls between 1½ and 2½ tablespoons. Gently press the top of each dough ball into the sprinkles so they adhere.
- Chill Dough (Optional): You may bake the cookies immediately or chill the dough balls for about 20 minutes to achieve thicker, softer cookies.
- Arrange on Baking Sheets: Place the dough balls on the prepared baking sheets, spacing them 1 to 2 inches apart to allow for spreading. Aim for mounded balls rather than flat to avoid thin cookies.
- Bake Cookies: Bake the cookies for 8 to 11 minutes until the edges are set but the centers remain slightly underdone for a soft texture. Adjust baking time based on the size of the dough balls.
- Shape Cookies Immediately (Optional): Right after removing from the oven, create perfectly round cookies by placing a round glass or bowl upside down on the cookie and swirling it gently or pressing the edges inward with the back of a spoon. This works best when cookies are hot on the baking sheet.
- Cool Completely: Transfer baking sheets to wire racks and allow cookies to cool completely. Optionally, press additional M&M’s or white chocolate chips on top while cookies are still warm.
Notes
- Chilling the dough balls before baking is optional but helps produce thicker, softer cookies.
- You can customize these cookies with different colored M&M’s or chocolate chips according to your preference.
- If you do not have pastel sprinkles, regular sprinkles or sanding sugar can be substituted for festive decoration.
- Make sure not to overmix the dough after adding the dry ingredients to keep the cookies tender.
- For best results, use cold egg straight from the fridge as specified to create a better dough texture.
- Use parchment paper or silicone baking mats to prevent sticking and enhance cleanup.
