Description

Egg Roll in a Bowl is a quick and easy skillet recipe that captures the delicious flavors of traditional egg rolls without the wrapper. Ground pork is sautéed with aromatic garlic, ginger, and onions, then combined with a fresh coleslaw mix and seasoned with soy sauce, rice vinegar, and optional chili garlic sauce for a flavorful and healthy one-pan meal. Ready in just 35 minutes, this dish is perfect for a low-carb, tasty weeknight dinner.

Ingredients

Scale

Protein and Aromatics

  • 1 lb (450g) ground pork (or chicken/turkey)
  • 1 tablespoon sesame oil
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

Vegetables

  • 1 14-oz (400g) bag coleslaw mix (shredded cabbage and carrots)
  • 3 green onions, sliced

Seasonings and Sauces

  • 3 tablespoons soy sauce (or tamari)
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili garlic sauce (optional, for heat)
  • 1 teaspoon toasted sesame seeds
  • Salt and black pepper, to taste

Instructions

  1. Brown the meat: Heat a large skillet over medium-high heat and add the ground pork. Cook for 6–7 minutes, breaking the meat apart with a wooden spoon until it is fully browned and no longer pink.
  2. Add aromatics: Stir in the finely diced onion, minced garlic, and grated fresh ginger. Cook for 2–3 minutes until the onion softens and the mixture becomes fragrant.
  3. Add cabbage mixture: Add the coleslaw mix (shredded cabbage and carrots) to the skillet. Toss well to combine with the meat. Continue cooking for 5–7 minutes, stirring occasionally, until the cabbage is tender but still slightly crisp.
  4. Season: Pour in the soy sauce, rice vinegar, and chili garlic sauce if using. Stir thoroughly to combine and let cook for an additional 2–3 minutes to allow the flavors to meld.
  5. Finish and serve: Remove the skillet from heat. Stir in the sliced green onions and toasted sesame seeds. Taste and adjust seasoning with salt, black pepper, or extra soy sauce as needed. Serve warm.

Notes

  • You can substitute ground chicken or turkey for pork to lighten the dish.
  • For a vegetarian version, use crumbled tofu or textured vegetable protein and substitute soy sauce with tamari for gluten-free.
  • The chili garlic sauce is optional but adds a nice spicy kick.
  • Serve over steamed rice or enjoy as is for a low-carb meal.
  • Leftovers keep well in the refrigerator for up to 3 days and reheat nicely in a skillet or microwave.
