- Season the Meat: Stir in the taco seasoning packet along with 1/4 cup of water. Mix thoroughly and let it simmer gently for about 5 minutes, allowing the seasoning to fully absorb and create a flavorful, saucy meat mixture.
- Make the Rotel Queso: In a separate saucepan over low heat, combine the drained Rotel diced tomatoes with green chilies, Velveeta cheese cubes, and milk. Stir continuously until the cheese fully melts into a smooth, creamy sauce. Keep the heat low to avoid scorching.
- Prepare Taco Shells: Warm the taco shells according to package instructions. For hard shells, heat in a 350°F (180°C) oven for 3–5 minutes or an air fryer at 300°F (150°C) for 1–2 minutes. For soft tortillas, warm them briefly in a skillet until slightly browned to improve texture and prevent cracking.
- Build Your Tacos: Fill each warmed taco shell with a generous portion of the seasoned ground beef. Drizzle the warm Rotel queso liberally over the meat for a cheesy finish.
