Instructions
- Prep ingredients: Cut the chicken into bite-sized cubes and mix with salt, white pepper, and soy sauce in a bowl. Lightly beat the eggs and set aside. Dice the onion and carrot, and chop the green onions for garnish.
- Cook the chicken: Heat a wok or large skillet over medium-high heat. Add olive oil, then cook the chicken cubes until golden brown and cooked through, about 5-6 minutes. Remove the chicken from the pan and set aside.
