  • 2 tbsp olive oil, divided

Vegetables

  • 2 cups broccoli florets, diced into bite size pieces
  • 1/2 yellow bell pepper, cut into 1 inch pieces
  • 1/2 red bell pepper, cut into 1 inch pieces
  • 1/2 cup carrots, shredded

Sauce & Seasoning

  • 1/2 tsp ground ginger
  • 2 tsp minced garlic
  • 2 tbsp sesame seeds
  • 1 tbsp cornstarch
  • 1/4 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tbsp honey

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together the cornstarch, chicken broth, soy sauce, and honey until smooth. Set aside to use later.
  2. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken, season with salt and pepper, and sauté for 3-5 minutes until browned and cooked through. Remove the chicken from the skillet and set it aside on a separate plate.
  3. Sauté the Vegetables: Reduce heat to medium-high and add the remaining 1 tablespoon of olive oil to the skillet. Add broccoli florets, yellow and red bell peppers, and shredded carrots. Cook, stirring occasionally, until the vegetables are tender but still crisp, about 4-5 minutes.
  4. Add Aromatics: Stir in ground ginger and minced garlic. Cook for 1-2 minutes more until the garlic becomes fragrant.
  5. Combine Chicken and Sauce: Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the mixture and stir well to coat everything evenly. Bring the mixture to a boil, stirring occasionally, and allow it to boil for about 1 minute until the sauce thickens.
  6. Finish and Serve: Sprinkle the stir fry with sesame seeds. Serve immediately as is, or over steamed rice for a complete meal. Enjoy!
