Ingredients
Scale
Chocolate Cupcakes
- 1 box Chocolate Cake Mix (plus required ingredients from the box: water, vegetable oil, eggs)
Chocolate Buttercream Frosting
- 1 cup unsalted butter, softened
- 3 ½ cups powdered sugar
- ½ cup cocoa powder
- 3 tablespoons heavy cream
- 1 pinch salt
- 2 teaspoons vanilla extract
Dirt Topping and Decorations
- 20 Oreo cookies, creme removed and crushed
- 12 fresh strawberries, rinsed and dried
- 12 ounces orange candy melts
Instructions
- Prepare the Cupcakes: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners. In a large mixing bowl, prepare the chocolate cupcakes according to the cake mix box instructions by combining it with the suggested water, vegetable oil, and eggs. Pour the batter evenly into the liners and bake as directed on the box until a toothpick inserted comes out clean.
- Cool the Cupcakes: Remove the cupcakes from the oven and allow them to cool completely on a wire rack to ensure the frosting does not melt when applied.
- Melt the Candy Coating: Place the orange candy melts in a microwave-safe bowl and heat in 20-second intervals, stirring well between each, until fully melted and smooth.
- Create Strawberry “Carrots”: Dip each rinsed and dried strawberry into the melted orange candy melts, twisting to coat evenly. Lift and let excess candy drip off, then place on parchment paper to set. Optional: drizzle extra melted candy over the set coating using a plastic bag with a small cut corner for added texture.
- Make the Chocolate Buttercream Frosting: In a large bowl, beat the softened butter until creamy and smooth. Add heavy cream, salt, and vanilla extract; mix to combine. Gradually add powdered sugar and cocoa powder, mixing well after each addition until a smooth, fluffy frosting forms. Adjust consistency with additional heavy cream if too thick or powdered sugar if too thin for piping.
- Frost the Cupcakes: Fill a piping bag fitted with a large star tip with the chocolate buttercream. Pipe a generous swirl of frosting on top of each cooled cupcake.
- Prepare Oreo Dirt: Crush the Oreo cookies by pulsing them in a food processor or placing them in a sealed bag and crushing with a rolling pin to form fine crumbs.
- Assemble the Cupcakes: Sprinkle crushed Oreo crumbs evenly over the frosted cupcakes to resemble dirt. Top each cupcake with a candy-coated strawberry “carrot” to complete the look.
Notes
- The Oreo creme is removed for a more realistic dirt appearance and texture.
- Allow frosting and dipped strawberries to fully set before assembling for best results.
- If you don’t have a food processor, crushing Oreos in a sealed bag with a rolling pin works well but takes more time.
- Adjust the frosting consistency with heavy cream or powdered sugar to suit your piping preference.
- Use fresh, firm strawberries for better coating and presentation.
