Ingredients
Scale
For the Tacos
- 12 6-inch corn tortillas (preferably gluten-free or gluten-free flour tortillas)
- 1 pound ground beef
- 1 packet taco seasoning (homemade or store-bought)
- 1 cup dairy-free Mexican cheese or dairy-free cheddar cheese
- Cooking oil spray
- Pinch of salt
Optional Toppings
- 1 head iceberg lettuce, shredded
- 1 cup pico de gallo
- Salsa, guacamole, or Cilantro Ranch for serving
Instructions
- Cook the Beef: In a skillet over medium heat, cook the ground beef sprinkled with the taco seasoning. Stir frequently to evenly coat the meat with seasoning and cook until the beef is fully browned and no longer pink. Set aside once cooked.
- Preheat Cooking Device: Preheat your air fryer to 350°F or your oven to 425°F to prepare for crisping the tacos.
- Soften Tortillas: Wrap the tortillas completely in a wet paper towel and microwave for 1-2 minutes until pliable. Alternatively, if using an oven, warm them on a sheet pan for 3-4 minutes to soften and prevent cracking when folded.
- Assemble the Tacos: Lay out tortillas on parchment or foil for easy cleanup. Spray each softened tortilla with cooking oil, flip, then add about 1 tablespoon of cheese on half of the tortilla. Top with approximately 3 tablespoons of the cooked beef, then fold the other half of the tortilla over to cover the filling. Repeat for all tortillas.
- Cook in Air Fryer: Place tacos in a single layer in the air fryer basket, ensuring they do not overlap. Spray generously with cooking oil and sprinkle with a pinch of salt. Cook for 4 minutes, flip, spray again, and cook for an additional 4-5 minutes until the tacos are crispy and lightly browned.
- Cook in Oven: Arrange tacos on a large baking sheet lined with parchment paper, without overlapping. Sprinkle a pinch of salt over the tacos. Bake for 10 minutes, then flip tacos, spray generously with cooking oil, and bake another 10 minutes until crispy and lightly browned.
- Serve: Remove tacos from the air fryer or oven once crisp. Serve immediately with your choice of toppings like shredded lettuce, pico de gallo, salsa, guacamole, or Cilantro Ranch for a fresh and flavorful meal.
