  • Juice of 1 lemon (23 tablespoons)
  • 1 (15 ounce) can chickpeas, rinsed and drained

  • Toasted pine nuts

Instructions

  1. Prepare the base: Add tahini, cold water, olive oil, cumin, sea salt, garlic, and lemon juice to a food processor. Puree the mixture until smooth to create a creamy base for the hummus.
  2. Add chickpeas: Incorporate the rinsed and drained chickpeas into the food processor. Puree for 3-4 minutes, pausing halfway to scrape down the sides of the bowl, until the hummus reaches a smooth, velvety consistency. If the mixture is too thick, gradually add an additional tablespoon or two of water to loosen it.
  3. Adjust seasoning: Taste the hummus and adjust flavors as desired by adding more salt, cumin, or lemon juice to enhance the flavor profile to your liking.
  4. Serve: Transfer the hummus to a serving dish. Garnish with optional toppings such as an extra drizzle of olive oil, chopped parsley, sumac, paprika, or toasted pine nuts. Serve immediately or refrigerate in a sealed container for up to 3 days.
