Instructions

  1. Cook the noodles: Bring a pot of water to boil and cook the frozen udon noodles according to the package instructions. Reserve 1/2 cup of the noodle cooking water and then drain the noodles. Rinse with cold water to stop cooking and set aside.
  2. Sauté aromatics: In a pan over medium heat, melt the unsalted butter. Add the minced garlic and chopped shallots, sautéing until fragrant and softened, about 2-3 minutes.
  3. Create the sauce: Stir in the gochujang and cook for about 30 seconds to release its flavors. Gradually add the heavy cream and reserved noodle water, followed by soy sauce and gochugaru. Stir well and bring the mixture to a gentle simmer, allowing it to thicken slightly over a few minutes.
  4. Toss noodles with sauce: Add the cooked udon noodles to the pan, tossing them carefully to coat each strand evenly with the creamy gochujang sauce.
