Description

These Cranberry Brie Bites are melt-in-your-mouth delicious appetizers featuring buttery, golden-brown puff pastry topped with melty brie cheese, tangy cranberry sauce, crispy bacon, and crunchy pistachios. Perfect for parties and festive occasions, they combine sweet and savory flavors in a delightful bite-sized treat.

Ingredients

Scale

Pastry

  • 1 (17.3 oz) package frozen puff pastry, thawed according to package directions
  • Drizzle of honey

Filling & Toppings

  • 48 oz round brie cheese, cubed into 9 pieces
  • 4 ½ tablespoons cranberry sauce
  • 5 slices bacon, cooked and crumbled
  • Salted pistachios, chopped

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) and line a rimmed baking sheet with a silicone mat to prepare for baking.
  2. Prepare the puff pastry: Unroll one sheet of the thawed puff pastry onto a clean work surface. Drizzle honey over it, then place the other puff pastry sheet on top and gently press down to combine the layers.
  3. Cut the rounds: Using a 2.5 inch circle cookie cutter, cut the puff pastry into 9 rounds. Place them evenly spaced on the prepared baking sheet.
  4. Bake the pastry rounds: Bake the puff pastry rounds in the preheated oven for 15 minutes until they are golden and puffed up.
  5. Add the brie: Place one chunk of brie cheese on top of each puff pastry round, then return to the oven and bake for an additional 5 minutes, or until the brie has melted.
  6. Add toppings and serve: Remove from oven and top each bite with ½ tablespoon cranberry sauce, crumbled bacon, chopped salted pistachios, and a drizzle of honey. Serve immediately and enjoy!

Notes

  • These bites are best served warm right out of the oven to enjoy the melted brie.
  • Store leftovers in the refrigerator for up to 3 days.
  • To reheat, place in a 375°F oven until warmed through to maintain crispiness.
  • Can be frozen for up to 2 months; thaw before reheating.
  • Use salted pistachios for a nice balance of savory and sweet; adjust to taste.
  • Adjust bacon quantity or omit for a vegetarian option, but this will alter the flavor profile.
