Instructions

  1. Rinse the Rice: Rinse the jasmine rice thoroughly in a fine mesh strainer under cold running water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.
  2. Cook the Coconut Mixture: In a medium saucepan, combine the full-fat coconut milk and water. Place the saucepan over high heat and bring the liquid to a boil, stirring occasionally to prevent scorching.
  3. Add Rice: Once boiling, add the rinsed rice and ½ teaspoon of salt to the saucepan. Stir briefly to combine.
  4. Simmer: Reduce the heat to low, cover the pot with a tight-fitting lid, and allow the rice to simmer gently for 15-20 minutes or until the liquid is fully absorbed and the rice is tender.
  5. Rest: Remove the saucepan from heat but keep it covered. Let the rice rest undisturbed for 15 minutes, allowing it to steam and finish cooking evenly.
  6. Fluff and Serve: Remove the lid and fluff the rice gently with a fork to separate the grains. Serve the coconut rice warm immediately, or transfer to an airtight container and store in the refrigerator for up to 7 days.
