Description

This Classic Creamy Chicken and Spinach Casserole is a comforting and flavorful dish combining tender shredded chicken, fresh spinach, and a creamy blend of sour cream and cream of chicken soup. Ingredients

Scale

Main Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach, chopped
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups cooked pasta (optional)

Topping

  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to prepare it for baking the casserole.
  2. Mix ingredients: In a large bowl, combine the shredded cooked chicken, chopped fresh spinach, cream of chicken soup, sour cream, garlic powder, onion powder, and salt and pepper. If using cooked pasta, fold it gently into the mixture to incorporate evenly.
  3. Prepare casserole dish: Grease a casserole dish lightly to prevent sticking, then transfer the combined mixture into the dish, spreading it out evenly and smoothing the top for uniform baking.
  4. Add toppings: Sprinkle the shredded cheese evenly over the top of the casserole. Optionally, add breadcrumbs on top of the cheese to create a crunchy crust when baked.
  5. Bake the casserole: Place the casserole dish in the preheated oven and bake for 25–30 minutes, or until the casserole is bubbly and the top is golden brown and slightly crisp.
  6. Serve warm: Remove from the oven and let it cool for a few minutes before serving. Enjoy the casserole warm for the best taste and texture.

Notes

  • You can substitute fresh spinach with frozen spinach; just be sure to thaw and drain it well before adding.
  • For a lower carb option, omit the pasta or substitute with cauliflower rice.
  • Use any cheese you prefer or have on hand; cheddar and mozzarella work best for melting.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Breadcrumb topping is optional but adds a pleasant crunchy texture.
