Description

This Christmas Rocky Road Dessert is a delightful treat combining rich dark and milk chocolates with buttery goodness, mini marshmallows, crunchy nuts, tart dried cranberries, and crunchy crushed biscuits. Perfectly chilled and cut into bite-sized squares, it’s an easy no-bake festive treat that’s sure to satisfy any sweet tooth during the holidays.

Ingredients

Scale

Chocolate and Butter Mixture

  • 200g dark chocolate
  • 100g milk chocolate
  • 100g unsalted butter

Add-ins

  • 150g mini marshmallows
  • 100g chopped nuts (almonds, walnuts)
  • 100g dried cranberries
  • 50g biscuits (crushed)

Instructions

  1. Melt the Chocolate and Butter: Place the dark chocolate, milk chocolate, and unsalted butter in a saucepan over low heat. Stir continuously until the mixture melts completely and becomes smooth and glossy.
  2. Cool the Mixture Slightly: Remove the saucepan from heat and let the chocolate mixture cool for a few minutes to avoid melting the add-ins later.
  3. Add Mix-Ins: Add the mini marshmallows, chopped nuts, dried cranberries, and crushed biscuits to the chocolate base. Stir thoroughly to ensure everything is evenly coated with chocolate.
  4. Prepare the Baking Dish: Line a baking dish with parchment or greaseproof paper for easy removal of the dessert later.
  5. Spread the Mixture: Pour the rocky road mixture into the prepared dish and spread it evenly with a spatula.
  6. Chill to Set: Place the dish in the refrigerator and chill for at least 2 hours, or until the mixture is firm and set.
  7. Cut and Serve: Once set, remove from the fridge, lift out the rocky road slab using the lined paper, cut into squares, and serve.

Notes

  • Use good quality chocolate for the best flavor and texture.
  • You can customize the nuts and dried fruit to your preference, such as using pistachios or dried cherries.
  • Store the rocky road in an airtight container in the refrigerator for up to one week.
  • For a gluten-free version, use gluten-free biscuits.
  • If you prefer a sweeter rocky road, increase the ratio of milk chocolate to dark chocolate.
