Description

These Chocolate Berry Bars are a deliciously refreshing treat combining fresh strawberries, blueberries, and raspberries with toasted almonds, coconut flakes, chia seeds, and a rich dark chocolate drizzle. This no-bake freezer-friendly recipe is perfect for a healthy dessert or snack that’s bursting with flavor and texture, balancing fruity freshness with creamy, crunchy toppings.

Ingredients

Scale

Fruit

  • 1 cup fresh strawberries, chopped into small pieces
  • ¾ cup fresh blueberries
  • ¾ cup fresh raspberries

Chocolate Mixture

  • ¾ cup dark chocolate chips
  • ¼ cup coconut oil

Toppings

  • 2 tablespoons coconut flakes
  • ¼ cup slivered almonds
  • 1 tablespoon chia seeds

Instructions

  1. Melt Chocolate: In a medium microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 1-minute increments, stirring between each, until the mixture is completely melted and smooth. Set aside to cool slightly.
  2. Toast Almonds and Coconut: Preheat a large skillet over medium heat. Add the slivered almonds and coconut flakes. Toast them, stirring frequently, until they turn a golden brown color and become fragrant. Remove from heat and set aside.
  3. Prepare Loaf Pan: Line a 9×5 inch loaf pan with parchment paper, ensuring there are flaps over the edges to help with removing the bars later.
  4. Layer Berries and Toppings: Place the chopped strawberries, blueberries, and raspberries in the lined loaf pan in layers. Sprinkle the toasted almonds, coconut flakes, and chia seeds evenly over the berries for extra texture and flavor.
  5. Drizzle Chocolate: Evenly drizzle the melted chocolate over the layer of berries and toppings. Gently tap the loaf pan on the countertop a few times to settle all the ingredients together and remove any air pockets.
  6. Freeze: Place the loaf pan in the freezer and allow the bars to set for at least 7 hours, or until completely firm.
  7. Slice and Serve: Remove the loaf pan from the freezer. Using the parchment flaps, lift the frozen block out onto a cutting board. Let it thaw for 2-3 minutes until easy to slice. Using a serrated knife, cut into 8 bars. Serve immediately and enjoy!

Notes

  • You can substitute dark chocolate chips with semi-sweet or bittersweet chocolate according to preference.
  • Store leftover bars in an airtight container in the freezer for up to 2 weeks.
