Instructions
- Heat Oil: Preheat about 2 inches of oil in a large stockpot over medium heat until it reaches 375°F (190°C), suitable for frying.
- Make Filling: In the bowl of a stand mixer fitted with a paddle attachment, combine cream cheese, sugar, lemon juice, vanilla extract, and salt. Beat on high speed for 1-2 minutes, pausing occasionally to scrape down the sides of the bowl to ensure a smooth, creamy filling.
- Wrap Egg Rolls: Place an egg roll wrapper on your work surface with one corner facing you. Spoon approximately 2 tablespoons of the cream cheese filling onto the wrapper. Fold the bottom corner up over the filling, then fold the two side corners inward toward the center like an envelope. Brush the top corner with water to seal, then roll up tightly. Set the wrapped egg roll aside and repeat with remaining wrappers and filling.
- Prepare Cinnamon Sugar: In a small bowl, whisk together the sugar and cinnamon until evenly combined. Set aside.
- Fry Egg Rolls: Once the oil is hot, carefully place about four egg rolls into the oil, frying for approximately 2 minutes or until golden brown and crispy. Remove the cooked egg rolls with a slotted spoon or tongs and drain on paper towels. Repeat with remaining egg rolls.
- Coat Egg Rolls: Roll the hot egg rolls in the cinnamon sugar mixture to coat evenly.
- Serve: Serve the cheesecake egg rolls warm with your choice of toppings such as caramel sauce, chocolate sauce, chopped strawberries, or a dusting of powdered sugar.
