Instructions
- Prepare the eggs: Peel the hard-boiled eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl.
- Mash the yolks: Mash the egg yolks with a fork or potato masher until they are smooth and lump-free, creating a creamy base for the filling.
- Mix the filling: Add mayonnaise, Dijon mustard, white vinegar or lemon juice, salt, and pepper to the mashed yolks. Mix thoroughly until the mixture is smooth and creamy. Taste and adjust seasoning as needed.
- Fill the egg whites: Transfer the yolk mixture into a piping bag or a plastic sandwich bag with a corner cut off. Pipe the mixture generously into the hollowed-out egg whites.
- Create the chick’s beak: Gently press a small carrot slice or piece into the center of the yolk mixture at one end of each egg half to form the chick’s beak.
- Add eyes: Using whole black peppercorns or small round items like black sesame seeds, gently press them into the yolk mixture on either side of the carrot slice to resemble eyes.
