Description

This Bacon Cheddar Crustless Quiche is a quick and easy savory dish that skips the crust for a lighter, low-carb meal. Packed with crispy bacon, sharp cheddar cheese, and creamy eggs, it’s perfect for breakfast, brunch, or dinner. Combining French quiche charm with weeknight simplicity, it offers full comfort-food flavor without the fuss of a crust.

Ingredients

Scale

Quiche Base

  • 6 large eggs
  • 1 cup (240 ml) milk or half-and-half
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Fillings

  • 1 cup (120 g) shredded sharp cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 1/4 cup (25 g) chopped green onions or fresh herbs

Instructions

  1. Cook Bacon: Cook the bacon slices in a skillet over medium heat until they become crisp. Once cooked, transfer them to a paper towel-lined plate to drain excess fat, then crumble into small pieces.
  2. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish thoroughly with non-stick spray to prevent sticking.
  3. Mix Egg Mixture: In a large mixing bowl, whisk together the 6 eggs, 1 cup of milk or half-and-half, salt, black pepper, and garlic powder until fully combined and smooth.
  4. Assemble Quiche: Evenly sprinkle the crumbled bacon, shredded cheddar cheese, and chopped green onions or herbs over the bottom of the prepared pie dish.
  5. Add Egg Mixture: Pour the whisked egg and milk mixture evenly over the layered fillings in the pie dish, ensuring everything is well distributed.
  6. Bake: Place the pie dish in the preheated oven and bake for 30 to 35 minutes, or until the quiche is just set in the center and a knife inserted comes out clean.
  7. Cool and Serve: Allow the quiche to cool for about 5 minutes after baking. Slice into portions and serve warm.

Notes

  • Cheese swaps: Use feta, Gruyère, or goat cheese for different flavors to vary the kind of savory taste you enjoy.
  • Vegetable add-ins: Incorporate spinach, mushrooms, or bell peppers to increase nutritional value and add texture.
  • Make ahead: This quiche can be baked in advance, refrigerated for up to 4 days, or sliced and frozen for up to 2 months to save time on busy days.
  • Diet-friendly: Omitting the crust keeps the dish low-carb and lighter than traditional quiches, making it suitable for lighter meal plans.
  • Serving idea: Pair with a fresh salad, soup, or a side of fruit for a well-balanced and satisfying meal.
