Instructions

  1. Thaw the Pie Crust: If your pie crusts are frozen, thaw them according to the package instructions until they are soft enough to roll out easily.
  2. Cut Out Circles: On a lightly floured surface, roll out the pie dough. Using a cookie cutter, cut out four 4-inch circles from each crust. You can discard the scraps, re-roll them to make more hand pies, or create smaller pies as desired.
  3. Add Filling: Place about 2 tablespoons of pumpkin pie filling onto each dough circle, leaving approximately a ½-inch border around the edges.
  4. Seal Edges: Dip your fingertip in water and run it along the borders of the pie dough circles. Fold each circle in half to create a half-moon shape, gently pinch the edges together, then crimp them further with a fork to seal securely.
  5. Prepare Egg Wash: In a small bowl, whisk together the large egg and 1 tablespoon water. Brush this mixture generously over the tops of the pies to give them a golden finish.
  6. Add Sugar and Cinnamon: Mix the cinnamon into the granulated sugar and sprinkle this mixture over the pies for added flavor and a touch of sweetness.
  7. Vent the Pies: Make three small incisions on the top of each pie to allow steam to escape during cooking.
